day one - butternut squash soup




Happy happy New Year to you.  Anyone still interested in doing the one week vegan challenge? In case you are, how about a warm, delicious, filling soup for day one?  I just roasted a large butternut squash by slicing it in half and putting it face down on a parchment lined baking sheet for about 45 minutes at 350 degrees.  I scooped out the insides and added it to a pot on the stove that had 1 small diced onion that was cooking in about a teaspoon of olive oil.  You can use water instead of oil if you want.  Then I added 2 cups of vegetable broth and a cup of plain, organic soy milk.  I seasoned with a tiny bit of salt and pepper and red pepper flakes.  Heated it through and then blended it til smooth. OMG, so delicious and so easy.  Add a green salad and some crusty bread...heaven.

  6. This butternut squash soup is beautiful and seems just the ticket after I finish the New Year's Day Hoppin' John and cornbread.

  8. We are not quite ready to go vegan yet either, but thanks for the delicious recipe! I made this tonight with chicken broth and 1/2 & 1/2 and we both loved it and went back for seconds! I am still stuffed but can't wait to eat more for lunch tomorrow! Have enjoyed your blog for several years now and have always meant to try some of your recipes - so glad I finally did!

    1. I often use ginger and garlic in my squash soup too. I also like a dash of nutmeg. I think there are lots of delicious ways to season it. I may be trying Janet's soon. :-)

  14. This Christmas, a friend made some butternut squash soup that was delicious. I've always shied away from butternut squash because I've heard it's difficult to cut, but the soup was so good and your recipe sounds so simple. I think I will give it a try.

All I wanted to say was Happy Belated Birthday but let me now also get this in: Because of this computer glitch (this was happening between me and you some time back, too...when you were in Utah, maybe [by the way, hope all is well with FIL]), if you never hear from me again, please know that I always faithfully read you and always love hearing what you have to say and share! Was wondering if you'd gotten any of that super-soaker rain they've been scaring us with on the news...we haven't gotten one drop yet and it was supposed to get here this time yesterday.     1. vicki, so sorry for all the problems with commenting. i know you are not the only one. it's a blogger issue and nothing i do can fix it. there are a couple of wordpress blogs that i cannot leave comments on and i know how frustrating that is. we are bracing for the rain also. expected it yesterday but none fell. today looks different though and i'm sure we will get some. so needed here, my garden looks awful. thank you for the birthday wishes too. xo

I got it; it was me not understanding your security features, mostly because it only seldom goes to that point of me needing to provide further proof that I'm not a robot. If it protects your blog and our info, that's super-great; I'm not complaining, just feeling stupid and clogging up your blog with banal comments on what have been two really nice posts of yours where the last thing I wanted to talk about was a web dilemma!

      Pouring here all morning! The gardener just cut my roses all the way down yesterday before the rain. I nipped the last buds and filled a vase. He also thatched the lawn--it looks like muddy yellow straw now; sigh--so it's perfect timing for the welcome rain to nourish (as long as we don't FLOOD, since the earth/dirt everywhere around here is so compressed from drought (like concrete) that the water can't soak in yet (or so they say!) and the water has to go somewhere. Did you get that part about being careful around drought-stricken trees? I guess the ones with shallow root balls, like the evergreens particularly. Have lost root structure and are unstable; nothing much left to hold them steady. Experts say that we have so many dead trees, or dying trees...millions in Calif...that with eventually-penetrating rainwater, they're likely to topple over, so we're supposed to be careful where we park a car, what we're walking under, etc. Crazy-sad, huh.

    1. well tom i think the idea behind it is that if you can do it for a week then maybe you can do it for a lifetime. which you can! it's so easy and healthful and so good for the planet. if you watch the movie cowspiracy you will come to understand that eventually the whole world will have to be vegan in order for us not to deplete our water and destroy the earth. i've been posting a daily shot of a meal on instagram. i've been super busy but will try to get recipes posted here as well. thanks! x
